Crunchy biscuits perfect with a cuppa – these delicious biscuits are caramelised and flavoured with warm spices.

Traditionally baked for St. Nicholas’ Day on the 5th December in the Netherlands (this tradition also occurs in nearby Belgium and Luxembourg!).

The meaning behind the name has a few interpretations including from the Latin “speculum” meaning “mirror” – after the stamps used to print “mirror images” onto the biscuits. They are also known as “windmill cookies” thanks to the windmill design often used (and as we know The Netherlands is known for their windmills!).
